Pampilho is a regional sweet associated with Santarém and Ribatejo confectionery.
It is elongated, with golden dough wrapped around an egg-yolk or almond filling, according to local tradition.

Ingredients
- 400 g flour
- 150 g sugar
- 100 g butter
- 3 eggs
- Lemon zest
- 1 teaspoon baking powder
- 200 g egg-yolk or almond filling
- 1 egg yolk for brushing
Method
- Mix flour, sugar, butter, eggs, zest and baking powder until a smooth dough forms.
- Leave to rest for 30 minutes, covered.
- Roll the dough into a thin rectangle and place the filling along its length.
- Roll up firmly into a long cylinder.
- Brush with egg yolk and bake at 180 °C until golden.
- Cool before cutting into diagonal slices.
- Serve with tea or coffee.
