About the recipe

Arroz de tamboril is a classic Portuguese rice dish, moist, aromatic and closely associated with Portugal’s coastal cooking.

Monkfish has firm flesh and a delicate flavour, ideal for cooking in tomato and herb broth.

Ingredients

  • 600 g monkfish, cut into cubes
  • 1½ cups rice
  • 1 chopped onion
  • 3 garlic cloves
  • 3 chopped tomatoes
  • ½ bell pepper
  • 1 litre fish broth
  • 80 ml olive oil
  • Coriander or parsley
  • Salt and pepper

Method

  1. Sauté onion, garlic, tomato and pepper in olive oil.
  2. Add the rice and stir it through the sautéed base.
  3. Add hot broth and cook until the rice begins to soften.
  4. Add the monkfish cubes.
  5. Keep the rice moist, with some broth still visible.
  6. Finish with fresh herbs and serve immediately.

  • Use dogfish, namorado or firm fish.
