Bolo de iogurte is a practical home-style recipe loved in many Portuguese households.

The cake is fluffy with a slight tang and can be served plain or with fruit.

Ingredients

  • 1 pot of plain yoghurt
  • 3 eggs
  • 2 yoghurt-pot measures of sugar
  • 3 yoghurt-pot measures of flour
  • 1 yoghurt-pot measure of oil
  • 1 tablespoon baking powder
  • Optional lemon zest

Method

  1. Mix yoghurt, eggs, sugar and oil.
  2. Add flour and zest.
  3. Fold in the baking powder.
  4. Pour the batter into a greased cake tin.
  5. Bake until golden.
  6. Serve plain or with fruit.
