About the recipe

Brisas do Lis are sweets associated with Leiria — small, glossy and rich in egg yolks.

The almonds give the sweets body and flavour, balancing the sweetness of the syrup.

Ingredients

  • 10 egg yolks
  • 2 whole eggs
  • 250 g of sugar
  • 120 ml of water
  • 120 g ground almonds
  • Butter for greasing
  • Sugar for coating the moulds

Method

  1. Prepare a syrup with the sugar and water.
  2. Mix the yolks, eggs and almonds without over-beating.
  3. Gradually add the warm syrup.
  4. Grease small moulds and coat them with sugar.
  5. Divide the batter among the moulds.
  6. Bake in a bain-marie until set.
