About the recipe

Dourada assada no forno is a clean and elegant recipe, closely linked to Portuguese fish cuisine.

The dish brings together whole fish, potatoes and vegetables, with olive oil tying the flavours together as everything roasts.

Ingredients

  • 1 large whole cleaned dourada (sea bream), or 2 small ones
  • 600 g sliced potatoes
  • 1 sliced onion
  • 2 tomatoes
  • 3 garlic cloves
  • 80 ml olive oil
  • 1 bay leaf
  • Parsley or coriander
  • Salt and pepper

Method

  1. Season the fish with salt, pepper and garlic.
  2. Parboil the potatoes for a few minutes.
  3. Arrange the onion, tomato and potatoes in a roasting dish.
  4. Place the sea bream on top and drizzle with olive oil.
  5. Roast until the meat comes away from the spine.
  6. Finish with fresh herbs.
