About the recipe

Filhós de Natal appear on many Portuguese tables, with variations from region to region.

The fermented dough should be light, golden and fragrant, good to eat while still warm.

Ingredients

  • 500 g flour
  • 10 g dried yeast
  • 250 ml warm milk
  • 3 eggs
  • 60 g sugar
  • Orange zest
  • 1 pinch of salt
  • Oil for frying
  • Sugar and cinnamon

Method

  1. Mix the yeast with the milk and part of the sugar.
  2. Add flour, eggs, zest and salt.
  3. Knead until a soft dough forms.
  4. Leave to rise until doubled in size.
  5. Shape into portions and fry.
  6. Roll in sugar with cinnamon.
