About the recipe

Tigelada beirã is a simple and ancient sweet, linked to hot ovens and earthenware.

The custard bakes quickly in the heated bowl, developing a firm texture and a cinnamon aroma.

Ingredients

  • 8 eggs
  • 1 litre of milk
  • 220 g of sugar
  • 1 tbsp flour
  • Lemon zest
  • Cinnamon
  • 1 pinch of salt

Method

  1. Heat the clay bowl in the oven.
  2. Mix the eggs, sugar, flour, milk, lemon zest and salt.
  3. Pass through a sieve for a smooth texture.
  4. Pour into the hot bowl carefully.
  5. Bake until set and golden on the edges.
  6. Serve cold or at room temperature.

Tips from Empório Portugal

  • A preheated bowl helps create the traditional texture.
  • Do not overbeat to avoid foaming.
  • Cinnamon may be added to the mixture or sprinkled on top.

Possible substitutions in Brazil

  • An ovenproof ceramic dish may replace the clay bowl.
  • Whole milk gives better results.

Pairing

Coffee or herbal tea. No mandatory alcoholic beverage.
