Trouxas de ovos are delicate, glossy sweets made from sheets of yolk cooked in syrup.
The wrapped shape gives the sweet its name and calls for a steady hand so the sheets do not tear.
Ingredients
- 14 sieved egg yolks
- 400 g of sugar
- 250 ml water
- Egg yolk sweet for filling
- Optional cinnamon
Method
- Prepare a light syrup and keep it warm.
- Pour small pools of yolk to form thin sheets.
- Lift each sheet carefully.
- Place a little egg yolk sweet in the centre.
- Fold into a small parcel.
- Serve with syrup and optional cinnamon.
