About the recipe

Arroz de tomate is a staple side dish in Portuguese cooking, especially alongside fish fillets and pataniscas.

The ideal consistency is loose and saucy, with some broth remaining and a fresh tomato flavour.

Ingredients

  • 1 cup of rice
  • 3 ripe tomatoes, chopped
  • 1 chopped onion
  • 2 garlic cloves
  • 60 ml olive oil
  • 3 cups of hot broth
  • Parsley or cilantro
  • Salt and pepper

Method

  1. Sauté the onion and garlic in olive oil.
  2. Add the tomatoes and cook until they break down.
  3. Add the rice and stir it through the sautéed tomato base.
  4. Add the hot broth.
  5. Cook until the rice is tender and still loose and saucy.
  6. Finish with fresh herbs.
