About the recipe

Azevias de batata-doce are festive sweets with a thin crust and aromatic filling.

Sweet potato adds natural creaminess and combines with cinnamon, lemon or orange.

Ingredients

  • Thin pastry dough for azevias
  • 500 g boiled and mashed sweet potato
  • 220 g of sugar
  • Cinnamon
  • Orange zest
  • 2 egg yolks (optional)
  • Oil for frying

Method

  1. Cook and mash the sweet potato.
  2. Cook with sugar, cinnamon and zest.
  3. Cook until a firm filling forms.
  4. Let it cool.
  5. Fill the pastry and seal well.
  6. Fry until golden and coat with sugar.

  • A firm filling makes the pastries easier to assemble.
  • Fry in hot but not smoking oil.

  • Orange-fleshed sweet potatoes give the filling a beautiful colour.
