About the recipe

Bolo de arroz português is a classic presence in cafes and pastry shops, recognized for its tall shape and simple flavour.

Rice flour gives a characteristic texture, slightly grainy and very pleasant with coffee.

Ingredients

  • 150 g rice flour
  • 120 g wheat flour
  • 180 g sugar
  • 100 g butter
  • 3 eggs
  • 120 ml milk
  • 1 teaspoon baking powder
  • Lemon zest

Method

  1. Beat butter and sugar until creamy.
  2. Add eggs one by one.
  3. Add milk and lemon zest.
  4. Mix the flours and baking powder.
  5. Spoon into tall moulds or small paper cases.
  6. Bake until golden.
