About the Recipe

Portuguese Rice Cake is a classic presence in cafes and pastry shops, recognized for its tall shape and simple flavor.

The rice flour gives it a characteristic texture, slightly grainy and very pleasant with coffee.

Ingredients

  • 150 g of rice flour
  • 120 g of wheat flour
  • 180 g of sugar
  • 100 g of butter
  • 3 eggs
  • 120 ml of milk
  • 1 teaspoon of baking powder
  • Grated lemon zest

Preparation Method

  1. Beat butter and sugar until creamy.
  2. Add eggs one by one.
  3. Add milk and lemon zest.
  4. Mix flours and baking powder.
  5. Distribute into tall molds or small molds.
  6. Bake until golden.

Tips from Empório Portugal

  • Do not overbeat after adding the flours.
  • Tall molds approximate the look of pastry.
  • Sprinkle sugar before baking for a crust.

Possible Substitutions in Brazil

  • Use muffin molds if you don't have proper molds.
  • Whole milk makes the crumb softer.

Pairing

Coffee or milk. No mandatory alcoholic beverage.
