About the recipe

Bolo de laranja à portuguesa is a homemade recipe, the kind that perfumes the kitchen before arriving at the table.

The juice and zest add freshness, while the crumb stays soft, making the cake ideal with coffee or tea.

Ingredients

  • 3 eggs
  • 200 g sugar
  • 250 g flour
  • 120 ml orange juice
  • Orange zest
  • 100 ml oil or melted butter
  • 1 tablespoon baking powder
  • 1 pinch of salt

Method

  1. Beat eggs and sugar until light.
  2. Add oil, juice and zest.
  3. Fold in the flour, salt and baking powder.
  4. Pour the batter into a greased cake tin.
  5. Bake in a moderate oven until golden.
  6. Leave to cool slightly before unmoulding.

Tips from Empório Portugal

  • Use the zest without the white pith.
  • Do not overmix after the flour.
  • A light orange syrup can make the cake moister.

Possible substitutions in Brazil

  • Tangerine can replace part of the orange.
  • Neutral oil makes the cake light.

Pairing

Black tea, coffee or milk. No mandatory alcoholic beverage.
