About the recipe

Bolo de noz is a family table recipe, with a toasted flavour and moist texture.

It can be served plain, with powdered sugar or with a discreet filling for special occasions.

Ingredients

  • 200 g of ground walnuts
  • 200 g flour
  • 180 g sugar
  • 4 eggs
  • 120 ml milk
  • 100 g butter
  • 1 teaspoon baking powder
  • Optional cinnamon

Method

  1. Beat butter and sugar.
  2. Add eggs one by one.
  3. Add milk.
  4. Mix the flour, walnuts, baking powder and cinnamon.
  5. Pour the batter into a greased cake tin.
  6. Bake until a skewer inserted in the centre comes out clean.

Tips from Empório Portugal

  • Lightly toasting the nuts intensifies the flavour.
  • Don't grind everything fine; a few pieces add texture.
  • Wait for it to cool before cutting.

Possible substitutions in Brazil

  • Brazil nuts can be part of the recipe.
  • Milk can be replaced with a neutral vegetable drink.

Pairing

Coffee, black tea or tawny Port. Content intended for people over 18 years of age. Drink in moderation.
