About the recipe

Bolo-rainha appeals to those who prefer nuts instead of candied fruit.

The enriched, fragrant dough retains the traditional crown shape.

Ingredients

  • 600 g flour
  • 12 g of dried yeast
  • 150 g sugar
  • 4 eggs
  • 120 g of butter
  • 120 ml of warm milk
  • 300 g of walnuts, almonds and chestnuts
  • Lemon and orange zest
  • 1 egg yolk for brushing

Method

  1. Prepare the enriched dough with milk, eggs, sugar, butter and flour.
  2. Knead until smooth.
  3. Add the chopped nuts.
  4. Leave to rise until doubled in size.
  5. Shape into a ring and brush with egg yolk.
  6. Bake until golden and fragrant.

  • Dough needs to rise slowly.
  • Slice only once completely cool.
