About the recipe

Bolos lêvedos recheados are a practical and delicious way to serve this Azorean flatbread.

The slightly sweet dough goes well with butter, cheese, jam or simple savoury fillings.

Ingredients

  • 500 g flour
  • 10 g dried yeast
  • 200 ml warm milk
  • 80 g sugar
  • 2 eggs
  • 60 g butter
  • 1 pinch of salt
  • Cheese, butter or jam for filling

Method

  1. Prepare the dough with the flour, yeast, milk, sugar, eggs, butter and salt.
  2. Leave to rise until doubled in size.
  3. Shape into thick discs.
  4. Cook on both sides.
  5. Open the cakes while they are still warm.
  6. Fill with butter, cheese or jam.
