About the recipe

Pudim de ovos português is a family dessert, simple in concept and demanding in terms of perfection.

The gentle water bath ensures a smooth texture, without excessive holes, and a balanced caramel.

Ingredients

  • 8 eggs
  • 1 litre of milk
  • 250 g of sugar
  • 1 teaspoon vanilla extract (optional)
  • Caramel for the mould
  • 1 pinch of salt

Method

  1. Caramelise the pudding mould.
  2. Mix eggs, milk, sugar and salt without over-beating.
  3. Pass through a sieve.
  4. Pour into the caramelised mould.
  5. Bake in a bain-marie until set.
  6. Refrigerate before unmoulding.

  • Mixing without foam leaves the pudding smooth.
  • The bain-marie should not boil vigorously.
  • Unmould only when thoroughly chilled.

Possible substitutions in Brazil

  • Whole milk is best.
  • Vanilla can be replaced with lemon peel.
