Pudim de ovos português is a family dessert, simple in concept and demanding in terms of perfection.

Ingredients
- 8 eggs
- 1 litre of milk
- 250 g of sugar
- 1 teaspoon vanilla extract (optional)
- Caramel for the mould
- 1 pinch of salt
Method
- Caramelise the pudding mould.
- Mix eggs, milk, sugar and salt without over-beating.
- Pass through a sieve.
- Pour into the caramelised mould.
- Bake in a bain-marie until set.
- Refrigerate before unmoulding.
