About the Recipe

Portuguese Egg Pudding is a family dessert, simple in concept but demanding in execution.

The gentle water bath ensures a smooth texture, without excessive holes, and balanced caramel.

Ingredients

  • 8 eggs
  • 1 liter of milk
  • 250 g of sugar
  • 1 teaspoon of vanilla optional
  • Caramel for the mold
  • 1 pinch of salt

Preparation Method

  1. Caramelize the pudding mold.
  2. Mix eggs, milk, sugar, and salt without over-beating.
  3. Strain through a sieve.
  4. Pour into the caramelized mold.
  5. Bake in a water bath until set.
  6. Refrigerate before unmolding.

Tips from Empório Portugal

  • Mixing without frothing keeps the pudding smooth.
  • The water bath should not boil aggressively.
  • Unmold when very cold.

Possible Substitutions in Brazil

  • Whole milk is the most recommended.
  • Vanilla can be replaced with lemon peel.

Pairing

Coffee or black tea. No mandatory alcoholic beverage.
