About the recipe

Queijadas de Évora represent Alentejo confectionery in a small, fragrant format.

Fresh cheese gives a gentle texture and flavour, while eggs and sugar bring typical Portuguese richness.

Ingredients

  • 300 g well-drained fresh cheese
  • 180 g of sugar
  • 4 eggs
  • 1 tbsp flour
  • Cinnamon to taste
  • Thin pastry to line the moulds
  • Lemon zest

Method

  1. Mash the fresh cheese until smooth.
  2. Mix the sugar, eggs, flour, cinnamon and lemon zest.
  3. Line small moulds with thin pastry.
  4. Fill the cases without overfilling.
  5. Bake until set and lightly golden.
  6. Leave to cool slightly before unmoulding.
