Rojões à moda do Minho are a pork dish marked by marinade, garlic, wine and slow cooking.

- 1.2 kg diced pork
- 200 ml Vinho Verde or dry white wine
- 5 cloves of garlic
- 1 bay leaf
- 1 tbsp sweet paprika
- 80 ml lard or olive oil
- Diced potatoes
- Turnip greens or kale
- Salt and pepper
Method
- Marinate the meat with wine, garlic, bay leaves, paprika, salt and pepper.
- Heat the fat and brown the pork in batches.
- Add the marinade and cook over low heat.
- Let the liquid reduce until the meat browns again.
- Fry or bake the potatoes.
- Serve with sautéed turnip greens.
