About the recipe

Tarte de feijão is a surprise in Portuguese sweets: white beans add body, not a heavy flavour.

With eggs, sugar and almonds, the filling is creamy and delicate.

Ingredients

  • 1 pie dough base
  • 250 g cooked and drained white beans
  • 250 g of sugar
  • 4 eggs
  • 80 g of ground almonds
  • Lemon zest
  • Powdered sugar

Method

  1. Grind the beans until they form a smooth puree.
  2. Mix eggs, sugar, almonds and lemon.
  3. Add the bean puree.
  4. Line the tart tin with the pastry.
  5. Pour in the filling and bake until set.
  6. Sprinkle with sugar once cold.
