Bean tart is a surprise from Portuguese confectionery: the white bean is used to give body, not heavy flavor.

Ingredients

  • 1 tart pastry base
  • 250 g of cooked and drained white beans
  • 250 g of sugar
  • 4 eggs
  • 80 g of ground almond
  • Grated lemon zest
  • Powdered sugar

Preparation Method

  1. Blend the beans until smooth puree.
  2. Mix eggs, sugar, almond, and lemon.
  3. Add the bean puree.
  4. Line the pan with pastry.
  5. Pour in the filling and bake until set.
  6. Sprinkle with sugar after cooling.
