About the Recipe
Eel rice marks the arrival of spring in the rivers of Minho and Douro, when this ancestral fish returns to the gastronomic conversation of the north.
It requires very fresh eel and careful cleaning — the flavor is intense, between the sea and the river, and the rice must absorb the broth without losing the identity of the fish.
As in many Portuguese recipes, there are variations by region, family, and cook — with white or red wine in the sauté, cod added in some households, or eel with eggs as an out-of-season alternative.
Ingredients
- 1 fresh eel (about 1.2 kg)
- 350 g of carolino rice
- 1 large onion
- 4 cloves of garlic
- 200 ml of dry white wine
- 1.2 l of fish broth
- 2 ripe tomatoes
- Olive oil, bay leaf, parsley, and pepper
- Salt to taste
Preparation Method
- Carefully clean the eel, removing the slime and cutting into thick slices; set aside.
- Sauté onion and garlic in olive oil until golden; add chopped tomato and let reduce.
- Add the eel, sear for two minutes on each side, and drizzle with white wine.
- Let the alcohol evaporate and add hot broth until covering the fish.
- Cook for five minutes and remove the eel; keep warm.
- Add the rice to the broth and cook until creamy, like a risotto.
- At the end, return the eel to the rice just to heat — do not overcook to avoid breaking it apart.
- Finish with chopped parsley and serve immediately.
