Arroz de lingueirão is a coastal Algarve recipe, fragrant and moist.

The lingueirão adds a delicate flavor to the broth, which should envelop the rice until serving time.

Ingredients

  • 700 g of cleaned lingueirão
  • 1 1/2 cups of rice
  • 1 chopped onion
  • 3 cloves of garlic
  • 2 chopped tomatoes
  • 80 ml of olive oil
  • Broth from the lingueirão
  • Coriander
  • Salt and pepper

Preparation method

  1. Open the lingueirão in a pot with a little water.
  2. Strain and reserve the broth.
  3. Sauté onion, garlic, and tomato in olive oil.
  4. Add the rice and hot broth.
  5. When the rice is almost ready, add the lingueirão.
  6. Finish creamy with coriander.
