About the Recipe

Seafood rice is a generous dish, linked to the coast and Portuguese seafood restaurants.

The recipe calls for flavorful broth and moist, almost brothy rice.

The seafood may vary depending on availability, but the doneness of the rice and the freshness of the broth are essential.

Ingredients

  • 2 cups of rice
  • 500 g of shrimp
  • 300 g of mussels
  • 300 g of squid rings
  • 1 onion
  • 3 cloves of garlic
  • 2 tomatoes
  • 1/2 bell pepper
  • 1.5 liters of seafood broth
  • Olive oil, cilantro, salt, and pepper

Preparation Method

  1. Prepare a sauté with onion, garlic, tomato, and bell pepper.
  2. Add the rice and coat it in olive oil.
  3. Add hot broth and cook until halfway done.
  4. Add squid and mussels.
  5. Add shrimp at the end to avoid overcooking.
  6. Finish brothy, with fresh cilantro.

Tips from Empório Portugal

  • Shrimp is added at the end to remain juicy.
  • Homemade broth from shells greatly improves the result.
  • Serve immediately, before the rice absorbs all the broth.

Possible Substitutions in Brazil

  • Use a combination of available seafood, avoiding excess frozen items with water.
  • Parsley can replace cilantro in milder versions.

Pairing

Fresh white wine from Lisbon or Alvarinho Vinho Verde. Content intended for those over 18 years old. Drink responsibly.
