Olive oil cookies celebrate one of the most emblematic ingredients of Portuguese cuisine.

They are dry, aromatic, and slightly salty or sweet, depending on the tradition of each household.

As with many Portuguese recipes, there are variations by region, family, and cook — with herbs, anise, or orange.

Ingredients

  • 300 g of flour
  • 100 ml of extra virgin olive oil
  • 100 g of sugar
  • 2 eggs
  • 1 teaspoon of baking powder
  • Grated lemon zest
  • 1 pinch of salt

Preparation Method

  1. Mix flour, sugar, baking powder, and salt.
  2. Add eggs, olive oil, and zest; knead until a homogeneous dough.
  3. Form rolls or balls and flatten slightly.
  4. Place on a lined baking sheet.
  5. Bake at 180 °C until golden at the edges.
  6. Let cool on a rack before serving.
