About the Recipe

Cookie cake is a Portuguese home, coffee, and simple party dessert.

Layers of cookies and cream create a cold sweet, with coffee flavor and soft texture after resting.

Ingredients

  • 300 g of Maria cookies
  • 250 g of unsalted butter
  • 180 g of powdered sugar
  • 2 optional pasteurized egg yolks
  • Cold strong coffee
  • Chocolate shavings or crushed cookies

Preparation Method

  1. Beat butter and sugar until light cream forms.
  2. Add pasteurized yolks if using.
  3. Quickly dip the cookies in coffee.
  4. Layer cookies and cream.
  5. Top with cream and cookie crumbs.
  6. Chill for a few hours before serving.

Tips from Empório Portugal

  • Quickly soak the cookies to avoid them falling apart.
  • Chilling in the refrigerator firms the cake.
  • Unsweetened coffee balances the cream.

Possible Substitutions in Brazil

  • Maizena cookies can replace Maria cookies.
  • Buttercream can be swapped for mascarpone cream in adaptation.

Pairing

Coffee or black tea. No mandatory alcoholic beverage.
