About the Recipe

Madeira Honey Cake is a dense, aromatic sweet associated with celebrations, especially Christmas.

The cane honey and spices create a deep flavor that improves with resting.

The homemade version should respect the idea of a moist, dark, and fragrant cake.

  • 250 ml of cane honey or molasses
  • 180 g of brown sugar
  • 150 g of butter
  • 150 g of walnuts and almonds
  • 100 g of optional candied fruits
  • 1 teaspoon of cinnamon
  • Cloves and nutmeg to taste
  • 1 teaspoon of baking soda
  • Orange zest

Preparation Method

  1. Heat cane honey, sugar, and butter until dissolved and let cool slightly.
  2. Mix flour, baking soda, and spices.
  3. Add the syrup to the dry ingredients and stir until combined.
  4. Add dried fruits and zest.
  5. Pour into a greased pan and bake in a medium oven.
  6. Let cool completely before cutting.
