Farófias are a light and delicate Portuguese dessert made with egg whites cooked in milk.

The contrast between the soft egg whites and the cream of egg yolks creates a simple and elegant sweet.

Ingredients

  • 6 separated eggs
  • 700 ml of milk
  • 160 g of sugar
  • Lemon peel
  • 1 cinnamon stick
  • 1 teaspoon of cornstarch
  • Cinnamon powder

Preparation Method

  1. Boil milk with lemon, cinnamon, and part of the sugar.
  2. Whip egg whites with sugar.
  3. Cook spoonfuls of egg whites in hot milk.
  4. Remove and set aside.
  5. Mix egg yolks with cornstarch and a little of the milk.
  6. Cook the cream and serve over the farófias.
