About the recipe
Malassadas dos Açores are festive sweets, made with fermented dough and simply finished with sugar.
They are relatives of other Portuguese fried foods, but carry Azorean identity at the family table.
Ingredients
- 500 g of flour
- 10 g of dry yeast
- 250 ml of warm milk
- 3 eggs
- 70 g of sugar
- Grated lemon peel
- 1 pinch of salt
- Oil for frying
- Sugar for finishing
Preparation method
- Activate the yeast with warm milk and sugar.
- Add flour, eggs, zest, and salt.
- Knead until soft.
- Let it rise.
- Fry portions in medium oil.
- Coat in sugar.
