About the Recipe

Madeiran malassadas are festive fried treats, soft on the inside and golden on the outside.

The fermented dough gains lightness with resting and should be fried carefully to avoid becoming heavy.

Ingredients

  • 500 g of flour
  • 10 g of dry yeast
  • 250 ml of warm milk
  • 3 eggs
  • 70 g of sugar
  • Grated lemon zest
  • 1 pinch of salt
  • Oil for frying
  • Sugar for finishing

Preparation Method

  1. Mix yeast, milk, and sugar.
  2. Add flour, eggs, zest, and salt.
  3. Knead until a soft dough is obtained.
  4. Let it rise.
  5. Fry portions in medium oil.
  6. Coat in sugar while still warm.
