About the Recipe

Orange pudding brings a citrus lightness to the Portuguese egg pudding.

The juice and zest perfume the batter, creating a balanced dessert for warm days or family lunches.

Ingredients

  • 6 eggs
  • 400 ml of strained orange juice
  • 250 ml of milk
  • 220 g of sugar
  • Orange zest
  • Caramel for the mold

Preparation Method

  1. Caramelize the mold.
  2. Mix eggs, juice, milk, sugar, and zest.
  3. Strain the mixture.
  4. Pour into the mold.
  5. Bake in a water bath until set.
  6. Chill before unmolding.

Tips from Empório Portugal

  • Strain the juice for a smooth texture.
  • Use only the colored part of the peel.
  • A slow water bath prevents cracks.

Possible Substitutions in Brazil

  • Pera or Bahia oranges work well.
  • Part of the milk can be replaced with more juice for a more citrus flavor.

Pairing

Iced black tea or coffee. No mandatory alcoholic beverage.
