About the recipe

Empadão à portuguesa is a practical, comforting family bake.

The filling may be made with minced meat, chicken or well-seasoned leftovers and is covered with smooth mashed potato.

Ingredients

  • 900 g of potatoes
  • 500 g of ground or minced meat
  • 1 chopped onion
  • 2 garlic cloves
  • 1–2 grated tomatoes
  • 80 ml olive oil
  • 1 egg yolk for brushing
  • Milk and butter for the mash
  • Salt, pepper and nutmeg

Method

  1. Cook potatoes and prepare firm mash.
  2. Sauté onion, garlic and meat in olive oil.
  3. Add tomatoes and cook until the filling is moist.
  4. Spread half the mash in an ovenproof dish, add the filling, then cover with the remaining mash.
  5. Brush the top with egg yolk.
  6. Bake until golden.

  • Mash that is too soft makes slicing difficult.
  • The filling should be moist, not watery.
  • Nutmeg goes well with potatoes.

  • Shredded chicken can replace meat.
  • Asterix potatoes give a firmer mash.
