About the recipe

Folar de Olhão is an Algarve Easter sweet, rich in layers and aromatic syrup.

Unlike drier folares, it is moist, shiny and deeply fragrant with cinnamon.

Ingredients

  • 600 g flour
  • 10 g dried yeast
  • 250 ml warm milk
  • 2 eggs
  • 80 g butter
  • Brown sugar
  • Cinnamon
  • Honey or syrup (optional)
  • 1 pinch of salt

Method

  1. Prepare a yeasted dough with the flour, milk, eggs, butter, yeast and salt.
  2. Leave to rise until doubled in size.
  3. Roll out portions of dough into discs.
  4. Layer with sugar, cinnamon and butter.
  5. Leave it to rest in the tin.
  6. Bake until golden and moist.

  • Use a tall cake tin to contain the syrup.
  • Unmould carefully.

Possible substitutions in Brazil

  • Brown sugar can replace Portuguese yellow sugar (açúcar amarelo).
  • Honey can add extra shine.
