About the recipe

Cod à Gomes de Sá is a classic associated with Porto and the generous, family-style cooking.

The dish highlights cod flakes, boiled potatoes, and plenty of olive oil, resulting in a simple yet flavorful recipe.

The tradition allows for small variations, especially in baking time and onion intensity.

Ingredients

  • 600 g of desalted cod in flakes
  • 800 g of thickly sliced potatoes
  • 2 sliced onions
  • 3 sliced garlic cloves
  • 4 boiled eggs
  • 100 ml of olive oil
  • Chopped parsley
  • Black olives
  • Salt and black pepper

Preparation method

  1. Cook the potatoes in water with a little salt until soft but still firm.
  2. Scald the cod, remove skin and bones, and separate into large flakes.
  3. Sauté onions and garlic in olive oil until sweet and shiny.
  4. Mix potatoes, cod, and sautéed mixture in a serving dish, drizzling with more olive oil.
  5. Place in a medium oven for about 20 minutes to heat and meld the flavors.
  6. Finish with boiled eggs, parsley, and olives.

Tips from Empório Portugal

  • Do not break the cod too much: large flakes make the dish more elegant.
  • The dish should go into the oven moist with olive oil, never dry.
  • Prepare part of the assembly in advance and finish close to serving.

Possible substitutions in Brazil

  • Common English potato works well if cut into thick slices.
  • Parsley can be combined with a little cilantro, if the family likes.

Pairing
