About the recipe

Folar de carnes is a festive recipe from the North, especially associated with Easter.

More than just filled bread, it symbolizes a shared table, a warm oven, and family celebration.

Ingredients

  • 600 g of flour
  • 12 g of dry yeast
  • 4 eggs
  • 120 ml of olive oil or lard
  • 180 ml of warm water
  • 300 g of sausages and cooked meats
  • 1 teaspoon of salt
  • Optional pepper

Preparation method

  1. Mix flour, yeast, eggs, fat, water, and salt.
  2. Knead until you get an elastic dough.
  3. Let it rise until doubled.
  4. Roll out the dough and distribute the meats.
  5. Shape the folar and let it rest again.
  6. Bake until golden brown.

Tips from Empório Portugal

  • Meats should be cold and drained.
  • The second fermentation makes the folar lighter.
  • Cut only after it cools down a bit.

Possible substitutions in Brazil

  • Use Portuguese sausage, ham, and shredded chicken.
  • Olive oil replaces lard for a lighter version.

Pairing

Douro red wine or black tea. Content intended for those over 18 years old. Drink responsibly.
