About the recipe

Folar transmontano is a festive bread, filled with meats and sausages.

The dough wraps around ham, chorizo, salpicão, or available meats, forming generous slices.

It is closely associated with Easter, but also appears as a hearty snack.

Ingredients

  • 600 g of wheat flour
  • 4 eggs
  • 80 ml of olive oil or fat
  • 120 ml of warm water
  • 10 g of dry yeast
  • 1 teaspoon of salt
  • 250 g of sliced sausages and meats

Preparation method

  1. Mix flour, yeast, water, eggs, fat, and salt.
  2. Knead until you get an elastic dough.
  3. Let it rise until doubled.
  4. Roll out the dough and distribute the meats and sausages.
  5. Seal in layers or roll and let rise again.
  6. Bake until golden and cooked through.

Tips from Empório Portugal

  • Very moist filling weighs down the dough.
  • Cut only after cooling slightly.
  • Use flavorful sausages, but not excessively salty.

Possible substitutions in Brazil

  • Portuguese sausage, raw ham, and paio can make up the filling.
  • Olive oil replaces lard for a lighter version.

Pairing

Red wine from Trás-os-Montes or Douro. Content intended for those over 18 years old. Drink responsibly.
