About the Recipe

Roasted Chicken à Portuguesa is a Sunday recipe, easily recognized by the aroma of garlic, paprika, and potatoes in the oven.

The simple marinade makes the meat flavorful, and the roasting pan yields a great sauce to serve at the table.

Ingredients

  • 1 whole chicken or in pieces
  • 800 g of potatoes
  • 4 cloves of garlic
  • 1 tablespoon of paprika
  • 120 ml of white wine
  • 80 ml of olive oil
  • 1 bay leaf
  • Juice of lemon
  • Salt and pepper

Preparation Method

  1. Mix garlic, paprika, wine, olive oil, bay leaf, lemon, salt, and pepper.
  2. Rub the seasoning on the chicken.
  3. Arrange potatoes in the roasting pan.
  4. Place the chicken on top and drizzle with the marinade.
  5. Roast until golden, basting a few times.
  6. Serve with a simple salad.

Tips from Empório Portugal

  • Marinating for a few hours intensifies the flavor.
  • Potatoes absorb the sauce from the roasting pan.
  • If browning quickly, cover with foil and finish uncovered.

Possible Substitutions in Brazil

  • Sweet paprika can be substituted with sweet paprika.
  • Thigh cuts work very well.

Pairing
