About the recipe

Rojões à moda do Minho is a pork dish marked by marinade, garlic, wine, and slow cooking.

The meat is tender on the inside and golden on the outside, often accompanied by potatoes and greens.

Ingredients

  • 1.2 kg of pork meat in cubes
  • 200 ml of green or white wine
  • 5 cloves of garlic
  • 1 bay leaf
  • 1 tablespoon of paprika
  • 80 ml of lard or olive oil
  • Cubed potatoes
  • Greens or cabbage
  • Salt and pepper

Preparation method

  1. Marinate the meat with wine, garlic, bay leaf, paprika, salt, and pepper.
  2. Heat fat and brown the cubes gradually.
  3. Add the marinade and cook on low heat.
  4. Let the liquid reduce until the meat browns again.
  5. Fry or roast the potatoes.
  6. Serve with sautéed greens.

Tips from Empório Portugal

  • Browning in stages prevents overcooking in excess liquid.
  • The reduction of the marinade creates deep flavor.
  • Greens balance the richness of the meat.

Possible substitutions in Brazil

  • Use pork shoulder or loin in cubes.
  • Collard greens can replace greens.
