Seasoned olives are a table starter, a conversation starter and a constant presence in Portuguese meals.

With just a few ingredients, they take on the aromas of garlic, herbs, olive oil and citrus.

Ingredients

  • 2 cups green or mixed olives
  • 2 sliced garlic cloves
  • Lemon peel
  • 1 sprig of rosemary or oregano
  • 60 ml of olive oil
  • black pepper
  • 1 teaspoon vinegar (optional)

Method

  1. Drain the olives.
  2. Mix garlic, lemon peel, herbs and olive oil.
  3. Cover the olives in this seasoning.
  4. Let it rest for at least 30 minutes.
  5. Stir again before serving.
  6. Serve with bread.
