About the recipe
Algarve-style cod is similar to Southern cuisine: tomatoes, onions, olive oil and, sometimes, roasted peppers.
It is prepared in a pan or on a platter, less formal than large oven-baked dishes, but equally traditional.
Ingredients
- 600 g desalted cod, flaked
- 4 potatoes
- 2 onions
- 3 ripe tomatoes
- 100 ml of olive oil
- 3 garlic cloves
- Parsley and coriander
- Black pepper
Method
- Cook the potatoes and cut into slices.
- Sauté the onion and garlic in the olive oil.
- Add chopped tomato and cook until sauce forms.
- Add the cod and cook for 8 minutes.
- Add the potatoes and fold in carefully.
- Season with pepper, finish with herbs and serve.
Tips from Empório Portugal
- Ripe summer tomatoes make the best sauce.
- Coriander enhances the Algarve profile.
- Serve with bread to soak up the sauce.
Possible substitutions in Brazil
- Peeled tomatoes can replace out-of-season fresh tomatoes.
- Roasted peppers complement the regional version.
