About the recipe

Cod à algarvia is close to Southern cuisine: tomato, onion, olive oil, and sometimes roasted peppers.

It is prepared in a pot or dish, less formal than the large oven dishes, but equally traditional.

Ingredients

  • 600 g of desalted cod flakes
  • 4 potatoes
  • 2 onions
  • 3 ripe tomatoes
  • 100 ml of olive oil
  • 3 cloves of garlic
  • Parsley and coriander
  • Black pepper

Preparation method

  1. Cook the potatoes and slice them.
  2. Sauté onion and garlic in olive oil.
  3. Add chopped tomato and cook until it forms a sauce.
  4. Add the cod and cook for 8 minutes.
  5. Add the potatoes and gently mix.
  6. Season with pepper, finish with herbs, and serve.
