About the recipe
In the Azores, cod is integrated into island cuisine with potatoes, onions and, sometimes, pimenta-da-terra or paprika.

Ingredients
- 600 g desalted cod, flaked
- 4 medium potatoes
- 2 onions
- 2 green peppers
- 100 ml of olive oil
- 3 garlic cloves
- pimenta-da-terra or paprika (colorau)
- Chopped parsley
Method
- Cook the potatoes and reserve in slices.
- Sauté onion, peppers and garlic in olive oil.
- Add the cod and cook for 8 minutes.
- Add the potatoes and fold in carefully.
- Season with the pimenta-da-terra or paprika and cook for another 5 minutes.
- Finish with parsley and serve hot.
