About the recipe

Batatas a murro are a simple, expressive Portuguese side dish.

The light crushing opens the potatoes so they absorb the olive oil, garlic and salt, creating golden edges and a soft interior.

Ingredients

  • 800 g of small potatoes
  • 4 sliced garlic cloves
  • 80 ml of olive oil
  • Coarse salt
  • Pepper
  • Rosemary or bay leaf (optional)

Method

  1. Cook the unpeeled potatoes until they are soft.
  2. Drain and lightly crush each potato.
  3. Place in roasting pan with garlic and olive oil.
  4. Season with coarse salt and pepper.
  5. Bake until golden on the edges.
  6. Serve hot with more olive oil.
