Rissóis de camarão are classic Portuguese party snacks, with thin dough and creamy filling.

The secret lies in a well-seasoned creamy filling and dough that seals securely and stays closed during frying.

Ingredients

  • 300 g of cleaned shrimp
  • 2 cups milk or shrimp broth
  • 2 tablespoons of flour
  • 2 tablespoons of butter
  • 1 small onion
  • Chopped parsley
  • Cooked dough for rissóis
  • Egg and breadcrumbs for breading
  • Oil for frying

Method

  1. Prepare the filling by sautéing chopped onion and shrimp.
  2. Add flour and milk or broth, stirring until it thickens.
  3. Roll out the dough thinly and cut into discs.
  4. Stuff, close in a half-moon shape and press the edges.
  5. Dip in egg and breadcrumbs.
  6. Fry until golden.
