Shrimp rissóis are classic snacks for Portuguese parties, with a thin dough and creamy filling.

The secret lies in a well-seasoned cream and a dough that closes without opening during frying.

Ingredients

  • 300 g of cleaned shrimp
  • 2 cups of milk or shrimp broth
  • 2 tablespoons of flour
  • 2 tablespoons of butter
  • 1 small onion
  • Chopped parsley
  • Dough for rissóis
  • Egg and breadcrumbs for breading
  • Oil for frying

Preparation method

  1. Prepare the cream by sautéing onion and chopped shrimp.
  2. Add flour and milk or broth, stirring until thickened.
  3. Roll out the thin dough and cut out circles.
  4. Fill, fold into half-moons, and press the edges.
  5. Dip in egg and breadcrumbs.
  6. Fry until golden.
