About the recipe

Cod rice is a Portuguese pot dish: simple, generous, and very fragrant.

The consistency can be drier or creamier, depending on the household and the occasion.

Tomato, bell pepper, onion, and olive oil form the base for the cod to impart flavor to the rice.

Ingredients

  • 400 g of desalted shredded cod
  • 1 1/2 cups of rice
  • 1 chopped onion
  • 2 cloves of garlic
  • 2 chopped tomatoes
  • 1/2 bell pepper in strips
  • 80 ml of olive oil
  • 4 cups of hot broth
  • Parsley or cilantro

Preparation method

  1. Sauté onion, garlic, tomato, and bell pepper in olive oil.
  2. Add the cod and stir for a few minutes.
  3. Add the rice and mix it into the sauté.
  4. Gradually add hot broth, keeping the rice moist.
  5. Cook until the grains are tender.
  6. Finish with fresh herbs and serve immediately.

  • Do not stir excessively to avoid breaking the rice.
  • Use low-salt broth, as the cod already contributes saltiness.
