Cod à moda de Braga is associated with Minho cuisine: hearty dishes, potatoes, onions, and plenty of olive oil.
Like all regional recipes, there are family variations — some include eggs, others are baked in the oven.
Ingredients
- 700 g of desalted cod in flakes
- 6 medium potatoes in slices
- 3 large onions sliced
- 4 boiled eggs
- 150 ml of olive oil
- 3 cloves of garlic
- Parsley and chives
- Black pepper
- Optional black olives
Preparation method
- Cook the sliced potatoes until soft and set aside.
- Sauté onions and garlic in olive oil until lightly golden.
- Add the cod and cook for 8 minutes over low heat.
- Add the potatoes and gently mix.
- Place on a serving dish, distribute sliced eggs on top.
- Drizzle with olive oil, season with pepper, and finish with herbs.
- Serve hot or bake for 10 minutes to lightly gratin.
