About the recipe
Cod à Narcisa is a baking dish that combines layers of cod, potato, onion, and eggs in generous portions.
The name refers to home and classic restaurant recipes — each family has small variations in the quantity and order of the layers.
Ingredients
- 700 g of desalted cod in flakes
- 6 medium potatoes in thin slices
- 3 large onions sliced
- 4 boiled eggs
- 3 cloves of garlic chopped
- 120 ml of olive oil
- 50 g of butter
- Chopped parsley
- Black pepper
- Black olives for decoration
Preparation method
- Preheat the oven to 190 °C.
- Sauté the onions in olive oil until soft, without browning too much.
- Layer potatoes, onions, and cod in a greased baking dish.
- Drizzle with olive oil, season with garlic and pepper.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil, distribute sliced eggs and dots of butter.
- Gratin for another 15 minutes until golden.
- Finish with parsley and olives before serving.
Tips from Empório Portugal
- Thin slices of potato cook more evenly.
- Check the salt of the cod before seasoning the dish.
- Let it rest for five minutes before serving.
Possible substitutions in Brazil
- Asterix or agate potatoes are good substitutes for regular potatoes.
- Butter can be replaced with extra olive oil on top.
