Cod à Zé do Pipo is a creamy and visually appealing oven-baked recipe from Porto.

The dish combines cod, sautéed onion, mashed potatoes, and a layer of mayonnaise that gratinates in the heat.

Ingredients

  • 4 pieces of desalted cod
  • 900 g of potatoes
  • 2 sliced onions
  • 3 cloves of garlic
  • 120 ml of olive oil
  • 200 g of mayonnaise
  • 100 ml of milk for the mash
  • 1 tablespoon of butter
  • Olives and pepper

Preparation method

  1. Cook the potatoes and prepare a mash with milk, butter, and pepper.
  2. Scald the cod and remove bones, keeping large pieces.
  3. Sauté onions and garlic in olive oil until very soft.
  4. Assemble the dish with onion, cod in the center, and mash around.
  5. Cover the cod with mayonnaise and bake to gratinate.
  6. Finish with olives.
